Organization: The Organisation Harley’s Fine Baking (https://www.harleys.com/), is a European style patisserie (premium cake selling company) created by an IIM professor to disrupt the cake and coffee market, established to spread bonafide taste of the streets of Manhattan across the world. Brought into the world from a love for baking, the desire to create a meeting place that serves delicious food with a warm rustic environment. The Organization offers a full scope of Breads, morning merchandise, cakes, baked and savoury goods. Currently the team size is of about 200+ people with more than 15 outlets across Hyderabad, along with a plan of opening 100 new outlets across Mumbai, Goa, Vijayawada, Bangalore, Chennai scaling up to 1000+ people over the next year.

Designation: Production Manager (Food Manufacturing)

Qualification: Bachelor’s degree in food technology, Mechanical / Production / Industrial Engineering. MBA or Diploma in Operations Management preferred.

Certifications: HACCP, ISO, or FSSAI certification (advantageous but not mandatory).

Experience: Minimum 5+ years in production management (food manufacturing) with 3+ years in a managerial or supervisory capacity.

Job Profile: The Production Manager will be responsible for overseeing end-to-end food production operations, ensuring product quality, safety, and compliance with regulatory standards. This role involves production planning, process optimization, cost control, and people management to achieve operational excellence in a high-volume food manufacturing environment.

Job Responsibilities:

  • Develop and execute daily and weekly production schedules in coordination with supply chain planning.
  • Ensure adherence to quality standards (FSSAI, HACCP, ISO) and food safety protocols.
  • Lead, mentor, and train production staff on SOPs, GMP, hygiene, and safety standards.
  • Oversee equipment utilization, preventive maintenance, and plant layout optimization.
  • Monitor KPIs such as OEE, line efficiency, waste, and downtime to drive continuous improvement.
  • Implement lean manufacturing and Kaizen practices for process optimization.
  • Ensure statutory compliance with labour laws, food safety regulations, and audit requirements.
  • Maintain accurate documentation including batch records, production reports, and audit trails.

  • Expertise in GMP, HACCP, ISO, and food safety regulations.
  • Proficiency in production management tools and ERP systems.
