Job Overview
Responsible for working with the Innovation & Marketing team to conceptualize products and commission new Product & Production lines for purchase and installation in one of Give & Go’s bakeries, with focus on product formulation, identifying the nutritional components & Marketing ingredient guardrails.
Key Responsibilities
- Lead innovation projects for company growth for an assigned Plant, liaising with all departments – Engineering, Marketing, Production, QA, Purchasing, Supply Chain
- Support new innovative product & production lines during startups until successful production is determined
- Contribute to Project Charters & key functional experts on Capital projects and is responsible for the outcomes
- Lead plant trials and FPR’s keeping detailed records on plant trial outcomes, including labor head count and suitability for production
- Record accurate formula data including recipes, methodology, deposit weights, baking losses, following test kitchen trials for translation to plant floor
- Ensure formulas are scaled to best accommodate ingredient pack sizes in the plant
- Formulate new product innovations and line extensions, seeing them through to commercialization
- Troubleshoot plant production issues & testing ingredient substitutions for Supply Chain
- Liaise directly with Management Team, delivering updates on progress of plant trials & project installations at Fewer Bigger Meetings
- Work with marketing team to learn channel specific needs and demands to report back to the Product Development department and assist the Product Developer in decision making
- Develop new products from Sales and Marketing suggestions through innovation session or independently
- Troubleshoot when necessary to ensure product success
- Sign off lab and customer samples, producing when necessary; independently maintaining TVC’s for formulation records, accurate costing, and Critical to Quality Points. Prepares TVC’s to share costs and product data
- Organize and conduct plant trials and first production run as the lead or the Subject Matter Expert (SME)
- Work with Production on new concepts/ processing methods ensuring ‘critical to quality’ processes are understood by manufacturing
- Mentoring PDA’s, approving lab made samples, train PDA in plant equipment capabilities
- Identify areas of improvements and concerns and recommend improvements by providing guidance in product upgrades to meet changing business demands
- Attend regular meetings to discuss about new product ideas and issues
- Observe all SQF and HACCP policies
- Attend FAT’s (Factory Acceptance Tests) & conducts SAT’s (Site Acceptance Tests) offsite for Capex projects
The Recipe For Success
- Completion of university degree in Food Science, or Culinary Mgmt or Pastry Chef
- Minimum 10 years bakery experience work within a Food Manufacturing company with a proven track record
- Minimum 5 years of team leadership experience
- Certificate in Food Labelling or Food Law or Chef’s or Baker Red Seal
- Extensive ingredient function knowledge; Extensive knowledge of commercial bakery / food processing equipment
- Creativity that translates to commercialization of products on bakery equipment
- Good interpersonal skills and relationship building skills to work with diverse teams; Good influencing skills
- Strong Project Management skills with extensive attention to detail
- Strong communication skills (verbal and written); sound judgement.
- Ability to problem solve and troubleshoot on assigned product categories & equipment needs
