Job Statement
As a lead contributor on the R&D team you will be working directly with our customers to bring exciting new innovative bakery product development driven by growth strategy & data driven insights. The Senior Food Scientist will focus on developing high quality products for our customers, as well as performing standardized physical and chemical tests on bakery products to test new ingredients, flavours and packaging.
Essential Functions
- Prototyping bench samples that are culinary inspired innovation to customers.
- Work directly with our customers to develop new formulations and processes meeting all key project requirements in our stage-gate process.
- Lead and execute plant trials to validate new formulations, products, and processes on our production lines.
- Support commercial launches, meeting all customer and product requirements, while working closely with the operations group to ensure long term manufacturing success.
- Support the team’s efforts to improve quality, efficiency, and sustainability in our processes.
- Maintain relationships with our key partners to solve supply chain challenges and access new ingredients and technical knowledge.
- Keep on top of market trends and developments in the bakery and snack space.
- Develop and maintain a variety of product and process documentation.
- Support innovation sessions.
- Responsible for developing new bakery products that are compatible with the existing manufacturing facility. This includes taking the product from concept to plant trial. Formulation improvements to existing bakery products in order to achieve cost savings and/or value add
- Working with existing bakery product formulas to improve product performance such as shelf life, or product features such as visual appearance.
- Review industry developments, and initiate and manage studies/projects for application to existing products
- Evaluate and identify alternative ingredients and process improvement opportunities.
Physical Demands
- May be required to stand/sit for long periods of time
- May engage in frequent bending, stooping or squatting
- Due to the environment, must be able to work in various weather and temperature conditions which include extreme heat, humidity and cold
- Must be able to lift a minimum of 10kg
- Must be able to work in tight or enclosed spaces
- May involve repetitive motions such as computer work/typing
Health and Safety
- Conduct all Job Tasks in a Safe and Responsible manner.
- Participate in all Health and Safety, GMP and HACCP training as required.
- Report any accidents, incidents and unsafe/hazardous conditions to your Manager
- Report any damages of property and machinery to your Manager
- Ensure that you understand how and when to use the Personnel Protective Equipment (PPE) that is located in your work area.
- Ensure you comply with OHSA, WSIB, MOL regulations and/or laws that govern “workers” responsibilities in the workplace (covered during orientation – section 28 of the OHSA i.e. “Green Book”) and Comply with Tradition Fine Foods Ltd. Safety Rules and Good Manufacturing Practices, and HACCP Programs
JOB SPECIFICATIONS
- Bachelor Degree in Food Science or a related field
- 5+ years’ experience in a similar role would be considered an asset
- Pastry experience is a definite asset
- Experience in a Food Manufacturing environment (HACCP)
- Excellent written and oral communication skills
- Ability to multi-task and prioritize on a regular basis
- Experience managing/supervising staff is an asset
- Meticulous attention to detail, especially with regard to food hygiene and safety
- Strong computer and presentation skills
- Ability to evaluate, discuss and/or form an opinion of laboratory test results
- Excellent customer service skills
- Must be able to work independently with a high degree of self-initiative
