Position Title: Protein Product Development Manager
Location: Calgary AB, Edmonton AB, or Vancouver BC
Job Type: Full Time Permanent
Position Summary:
As a Protein Product Development Manager, you will be responsible for leading the development and innovation of new further processed meat, seafood, and other protein products from concept to commercialization. You will collaborate closely with cross-functional teams including sales, production, CFS customers, and marketing to create unique and appealing protein-based offerings that meet consumer demands and market trends.
Key Responsibilities:
- Conceptualize, design, and formulate new further processed protein products, considering taste, texture, nutritional value, and market feasibility.
- Conduct thorough research on market trends, consumer preferences, and competitor analysis to identify opportunities for product innovation.
- Develop and optimize recipes, formulations, and processing techniques for further processed protein products, ensuring consistency, quality, and cost-effectiveness.
- Collaborate with procurement specialists to source high-quality raw materials and ingredients that align with product specifications and company standards.
- Collaborate with stakeholders to conduct product trials, sensory evaluations, and product testing to assess quality, taste, and shelf life of developed products.
- Work closely with production teams and process improvement specialists to scale up recipes for commercial production while ensuring adherence to regulatory standards and food safety guidelines.
- Document and maintain detailed records of formulation, procedures, and specifications for new products.
- Stay updated on industry trends, technological advancements, and relevant scientific research to drive innovation in meat product development.
Qualifications and Skills:
- Bachelor's or Master's degree in Food Science, Meat Science, Culinary Arts, or a related field.
- Proven experience (5+ years) in food product development, specifically in further processed protein products.
- Strong knowledge of meat processing techniques, food chemistry, and ingredient functionality.
- Ability to innovate, think creatively, and translate ideas into successful food products.
- Excellent project management skills with the ability to manage multiple projects simultaneously.
- Understanding of regulatory requirements and food safety standards (CFIA, HACCP, GMP, etc.).
- Strong communication and interpersonal skills to collaborate effectively with cross-functional teams.
