While we operate our own restaurant, our culinary team also proudly delivers every food experience throughout the hotel—from breakfast, in-room dining, executive lounges and VIP amenities to banquets, meetings, and special events.

We’re looking for an exceptional Sous Chef who wants to build something—not simply maintain it.

The Opportunity

This is not a position where you’ll spend your day watching service from the pass.

You’ll be leading one of Vancouver’s most diverse culinary operations alongside the Culinary Director and PM Sous Chef, helping shape the future of the kitchen while mentoring cooks, improving systems, and delivering exceptional food every day.

This is a leadership position for someone who enjoys being involved, solving problems, developing people, and continuously improving the operation.

Your Responsibilities

You’ll oversee the daytime culinary operation, including:

  • Breakfast, lunch, and brunch service
  • Daily production and prep systems
  • In-room dining and hotel culinary support
  • Receiving, inventory, and purchasing
  • Kitchen organization and sanitation
  • Team leadership and coaching
  • Food quality and consistency
  • Labour productivity and scheduling support
  • Food cost awareness and waste reduction
  • Cross-department communication
  • Maintaining Michelin-level discipline and luxury hospitality standards

Who You Are

You’re already an accomplished Sous Chef—or a talented Junior Sous Chef who’s ready to lead.

You understand that leadership is about building people, not simply running service.

You thrive in organized kitchens, enjoy mentoring cooks, and take pride in creating systems that make everyone around you better.

You likely possess:

  • Red Seal Certification (preferred)
  • Several years of leadership experience in quality restaurants, hotels, clubs, or luxury hospitality
  • Strong organizational and communication skills
  • Excellent understanding of food cost, inventory, labour management, and purchasing
  • A calm, professional approach under pressure
  • High personal standards and strong attention to detail
