Reporting To: Food & Beverage Manager / General Manager
Team Handling: Culinary Team, Kitchen Stewards & Support Staff
Role Overview
The Executive Chef will be responsible for the pre-opening, launch, and end-to-end culinary operations of an ultra-luxury residential building catering exclusively to Ultra High Net Worth Individuals (UHNI) .
The role requires a strong 5-star luxury hotel background , exceptional expertise in multi-cuisine cooking , high standards of hygiene and food safety, leadership capability, creativity, and an unmatched focus on luxury dining experiences.
The Executive Chef will lead the kitchen operations to ensure world-class food quality, service excellence, cost control, procurement, and team management while delivering personalized dining experiences for UHNI residents.
Key Responsibilities
1. Pre-Opening & Concept Development
- Lead pre-opening planning and complete kitchen setup.
- Design kitchen workflow and operational layout for multi-cuisine execution.
- Develop and curate luxury menus across cuisines including:
- Indian (regional and modern interpretations)
- Continental (French, Italian, European classics)
- Oriental (Chinese, Japanese, Thai, Pan-Asian)
- Mediterranean (Greek, Spanish, Levantine)
- Seasonal, wellness-focused and specialty menus
- Source premium ingredients and build a strong vendor network.
- Create SOPs, recipe manuals, plating guidelines, and hygiene standards.
- Recruit, train, and deploy culinary teams before launch.
2. Culinary Operations Management
- Manage end-to-end kitchen operations for:
- In-residence dining
- Private dining rooms, lounges, and poolside service
- Events, banquets, and private celebrations
- Ensure consistency in taste, presentation, and portion control across cuisines.
- Maintain authentic flavors with luxury plating standards.
- Deliver hotel-level quality adapted to a premium residential environment.
3. Resident Experience & Personalization
- Create personalized dining experiences for UHNI residents.
- Maintain resident preference profiles including:
- Dietary restrictions
- Allergies
- Wellness requirements
- Cuisine preferences
- Plan curated tasting menus, chef’s tables, and private dining events.
- Ensure complete discretion and professional interaction with residents.
4. Hygiene, Safety & Compliance
- Ensure compliance with FSSAI regulations and global hygiene standards.
- Maintain strict sanitation, cleaning, and food safety protocols.
- Conduct regular kitchen audits, hygiene checks, and equipment inspections.
- Manage pest control, waste management, and kitchen safety procedures.
5. Budgeting & Financial Management
- Prepare and manage kitchen budgets (CapEx & OpEx).
- Monitor and control:
- Food costs across multiple cuisines
- Labor costs
- Inventory levels and wastage
- Implement cost controls without compromising luxury standards.
- Negotiate vendor contracts and ensure premium quality procurement.
- Prepare MIS reports, forecasts, and variance reports for management.
6. Team Leadership & Development
- Lead, motivate, and manage a high-performing culinary team.
- Recruit specialist chefs for different cuisines.
- Conduct training on:
- Multi-cuisine food preparation
- Luxury plating and presentation
- Hygiene and safety standards
- Build a culture of discipline, creativity, innovation, and excellence.
7. Interdepartmental Coordination
- Work closely with:
- F&B Manager for service alignment and menu planning
- Housekeeping for cleanliness and pantry operations
- Concierge and Events teams for private functions and VIP gatherings
- Ensure smooth execution of all multi-department requirements.
Candidate Profile & Eligibility
Mandatory Requirements
- Minimum 5 years of experience as Executive Chef or equivalent senior chef role.
- Strong background from 5-star luxury hotels only such as:
- The Oberoi Group
- Taj Hotels
- Four Seasons
- Proven pre-opening experience in luxury hospitality.
- Expertise in Indian, Continental, Oriental, and Mediterranean cuisines .
- Experience managing large kitchen teams with multi-cuisine operations.
- Exposure to UHNI / VIP guest service standards.
Preferred Experience
- Experience in luxury residences, branded residences, private clubs, or elite hospitality setups.
- International culinary exposure.
- Knowledge of wellness-focused menus, fusion cuisine, and dietary-specific meal planning.
