Job Description
Position Overview
We are seeking an experienced Line Cook / Prep Cook to join our fast-paced kitchen team. This is a hands-on role responsible for both meticulous preparation and high-volume execution during service. The ideal candidate has a passion for Italian cuisine, strong technical skills, and the ability to thrive under pressure while maintaining the highest standards of food quality, safety, and presentation.
This is a full-time or part-time position (depending on candidate availability) that includes daytime prep shifts and evening line shifts. Weekend and holiday availability is required.
Key Responsibilities
Prep Duties (Morning/Afternoon Shifts):
- Prepare and portion fresh ingredients daily, including house-made pasta, dough for pizzas and focaccia, sauces (marinara, Alfredo, Bolognese, pesto), stocks, vegetables, proteins, and mise en place.
- Follow standardized recipes with precision to ensure flavor consistency and portion control.
- Maintain proper labeling, dating, and rotation of all prepared items (FIFO).
- Operate and maintain kitchen equipment safely (pizza ovens, pasta machines, slicers, mixers, etc.).
- Assist with inventory checks and ordering of necessary prep items.
Line Cook Duties (Service Shifts):
- Work multiple stations efficiently, including pizza, grill, sauté, pasta, and expo.
- Execute dishes to order with speed and accuracy during peak hours while maintaining quality and presentation standards.
- Handle wood-fired pizza production: stretching dough, topping, and monitoring oven temperatures for perfect char and cook.
- Plate and garnish dishes according to established specifications.
- Collaborate closely with the Chef, Sous Chef, and front-of-house team to ensure seamless service.
- Monitor and maintain food safety standards (HACCP principles, temperature logs, sanitation).
Additional Expectations:
- Uphold a clean, organized, and sanitary workstation at all times (“clean as you go”).
- Contribute to menu development and special projects (seasonal items, chef’s features).
- Train and mentor newer kitchen staff when needed.
- Adapt to last-minute changes, special requests, or large-party catering orders.
Qualifications & Requirements
- Minimum 2 years of professional line cook or prep cook experience in a full-service restaurant, preferably Italian, pizza, or high-volume scratch kitchens.
- Demonstrated knowledge of Italian cuisine, including pasta making, sauce preparation, pizza dough handling, and classic cooking techniques (sauté, grill, braise, roast).
- Strong knife skills and understanding of food costing and portion control.
- Current ServSafe Food Handler certification (or willingness to obtain within 30 days).
- Ability to work in a physically demanding environment: standing for long periods, lifting up to 50 lbs, working in hot conditions near ovens.
- Reliable transportation and flexible availability (evenings, weekends, holidays).
- Legal right to work in the United States.
Preferred Qualifications
- Experience with pizza and dough production (a plus, not required)
- Culinary school or formal apprenticeship (a plus, not required).
- Bilingual (English/Italian or English/Spanish) is a strong advantage.
