Role Purpose
To lead product development, standardization, and scale‑up of Indian QSR offerings especially Biryani, Gravies, Bakery and RTC products ensuring consistency, food safety, cost efficiency, and rapid commercialization across central kitchen and outlets.
Key Responsibilities
Product Development & Innovation
- Lead R&D for Indian QSR menu including biryanis, curries, kebabs, bakery items, breads, desserts, and gravies
- Develop scalable formulations suitable for high‑volume production
- Drive menu innovation, seasonal launches, and reformulations aligned with brand positioning
- Conduct sensory evaluation, shelf‑life studies, and stability trials
Standardization & Commercialization
- Create and validate SOPs, BOMs, recipes, yield sheets, and cooking protocols
- Ensure smooth lab‑to‑pilot‑to‑commercial scale‑up at central kitchens
- Standardize portioning, holding times, reheating methods, and dispatch norms
Process & Central Kitchen Optimization
- Design and optimize process flows for Central Kitchen
- Work closely with Operations, SCM, QA, and Engineering teams to improve productivity
- Identify opportunities for Automation, Cost reduction, and Yield improvement
Quality, Food Safety & Compliance
- Ensure compliance with FSSAI, HACCP, ISO 22000, internal quality standards
- Define critical control points (CCPs) for Indian QSR foods
- Support audits, documentation, and corrective action plans
- Drive continuous improvement in product consistency and customer experience
Vendor & Ingredient Development
- Collaborate with vendors for spice blends, rice, fats, bakery ingredients, and packaging
- Approve raw materials through trial, sensory, and functional evaluation
- Work on alternative sourcing and cost optimization without compromising quality
Cross‑Functional Leadership
- Act as a bridge between Culinary, QA, SCM, Marketing, and Operations
- Present Product Concepts, trials, and performance metrics to leadership
Key Skills & Competencies
- Strong expertise in Indian cuisine especially Biryani, gravies, rice, and bakery
- Hands‑on experience in QSR or large‑scale food service operations
- Knowledge of thermal processing, shelf‑life extension, RTC/RTD foods
- Strong understanding of food safety, process control, and documentation
- Commercial mindset with focus on cost, scalability, and speed‑to‑market
- Analytical, structured, and execution‑driven approach
Qualifications
- B.Tech / M.Tech Food Technology / Food Science
- Additional certification in HACCP / ISO 22000 preferred
Experience
- 10+ years in Food R&D / Product Development
- Minimum 5+ years in QSR / Central Kitchen / Indian food brands
- Proven experience in multi‑city or multi‑brand operations
