Roles and Responsibilities:
- Develop and execute a menu that showcases Japanese/Nikkei cuisine, including sushi, dim sum, ramen, and other Japanese specialties.
- Experiment with new dishes and flavor combinations using traditional Japanese ingredients like miso, yuzu, and shiso.
- Stay current on culinary trends, particularly in Nikkei, Japanese, and fusion cuisine, and incorporate them into the menu.
- Oversee daily kitchen operations, ensuring consistent quality and presentation of all dishes.
- Maintain high standards of kitchen hygiene, food safety, and sanitation according to local regulations.
- Train, mentor, and manage kitchen staff, fostering a positive and productive work environment.
- Collaborate with the management team to create seasonal menus, special events, and promotional offerings.
- Monitor inventory levels and work with suppliers to source the best ingredients for Japanese and Peruvian dishes.
- Ensure cost-effective kitchen operations, including managing food costs, portion control, and waste reduction.
- Develop and implement standard operating procedures for food preparation and presentation.
